The Biscuit Belly family is made up of a group of transplants who are as passionate about Louisville as they are about biscuits. Each member of our team brings their own unique ingredient that comes together to create an unforgettable dining experience.
Tavis Rockwell, Culinary Director
Tavis is the mastermind behind our menu. He oversees the Biscuit Belly culinary team and ensures every dish is packed with flavor and comes out perfectly every time. Tavis comes from Indianapolis and his favorite item is—you guessed it—the Rockwell Supreme.
Nate Gibson, Head Chef
Nate hails from Evansville, Indiana and grew up smoking meat with his dad and making biscuits and gravy with his mom. Biscuit Belly’s signature chocolate gravy is an old family recipe. A graduate of Sullivan’s Culinary School, Nate worked as Sous Chef at LouVino’s Highlands location for 4 years prior to joining the Biscuit Belly team.
Lizzy Turner, General Manager
Lizzy is a service industry veteran who ate biscuits and gravy once a week as a kid. She came to Louisville by way of Kansas City. Her background as a bartender and barista make her the perfect fit for her current role devising coffee-inspired cocktails and managing Biscuit Belly’s front of house operations.
